Brown Sugar Smoked Beef Ribs

Dry Rub Ingredients

  • 4 pounds beef ribs
  • 1 cup brown sugar
  • 1/4 cup kosher salt
  • 1 tablespoon black pepper
  • 1 tablespoon smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon cayenne pepper

Spritzing Ingredients

  • 1/2 cup apple cider vinegar
  • 1/2 cup water

Instructions

  1. Preheat smoker to 225F. Add chosen wood chips to smoker.
  2. In a mixing bowl, combine brown sugar, kosher salt, black pepper, smoked paprika, garlic powder, onion powder, and cayenne pepper to create a dry rub.
  3. Generously rub dry mixture all over the beef ribs, ensuring they are evenly coated. Let ribs sit at room temperature for about 30 minutes.
  4. Prepare spritzing mixture by combing water and apple cider vinegar in a spray bottle.
  5. Place ribs on the cooking grate, bone side down. Close smoker and let ribs smoke.
  6. Maintain a consistent temperature of 225F, spritz ribs with vinegar-water mixture every hour. 
  7. After 5-6 hours of smoking, check ribs for doneness. They should reach an internal temperature of 195F.
  8. Once cooked, let ribs rest for about 15-20 minutes before slicing and serving.
