Denver Steak & Eggs Breakfast Skillet

Ingredients

1 lb Denver steak, sliced into thin strips
- 2 large eggs
- 2 medium-sized potatoes, peeled and diced
- 1/4 cup chopped fresh cilantro
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a large skillet, heat the olive oil over medium-high heat.
- Add the sliced Denver steak and cook for 3-4 minutes per side, or until cooked to desired level of doneness. Remove from skillet and set aside.
- Reduce heat to medium and add diced potatoes. Cook for 5-6 minutes, stirring occasionally, or until they are golden brown and crispy.
- Crack in the eggs and scramble them with a spatula. Season with salt and pepper to taste.
- Add the cooked Denver steak back into the skillet and stir to combine with the eggs and potatoes.
- Serve hot, garnished with chopped cilantro.
