Brisket Nachos

Ingredients

  • 4 ounces corn tortilla chips
  • 1 cup leftover cooked shredded brisket (click here for a great BBQ Beef Brisket recipe)
  • 1 corn cob, kernels cut off cob (or 1 cup canned/frozen)
  • 1/2 small red onion, diced
  • 1 jalapeño pepper, thinly sliced
  • 2 green onions, chopped
  • 1/2 cup pinto beans
  • 1 large tomato, chopped
  • 1/4 cup BBQ sauce (try our Hickory BBQ sauce)
  • 3 ounces shredded cheese

 

Garnishes

  • Chopped fresh cilantro
  • Sliced avocado
  • Lime wedges

 

Instructions

  1. Preheat oven to 350°F.
  2. Place a layer of half the tortilla chips in a cast iron skillet or small foil lined baking sheet.
  3. Layer half of all the other ingredients on top. Repeat with an additional layer.
  4. Place in the oven for 5-10 minutes until cheese is melted and bubbly.
  5. Remove and garnish as desired. Serve with additional BBQ sauce and/or sour cream if desired.
