Ingredients
- 4 ounces corn tortilla chips
- 1 cup leftover cooked shredded brisket (click here for a great BBQ Beef Brisket recipe)
- 1 corn cob, kernels cut off cob (or 1 cup canned/frozen)
- 1/2 small red onion, diced
- 1 jalapeño pepper, thinly sliced
- 2 green onions, chopped
- 1/2 cup pinto beans
- 1 large tomato, chopped
- 1/4 cup BBQ sauce (try our Hickory BBQ sauce)
- 3 ounces shredded cheese
Garnishes
- Chopped fresh cilantro
- Sliced avocado
- Lime wedges
Instructions
- Preheat oven to 350°F.
- Place a layer of half the tortilla chips in a cast iron skillet or small foil lined baking sheet.
- Layer half of all the other ingredients on top. Repeat with an additional layer.
- Place in the oven for 5-10 minutes until cheese is melted and bubbly.
- Remove and garnish as desired. Serve with additional BBQ sauce and/or sour cream if desired.
