Steak Flight Nights return this winter for another season of intimate, interactive tasting experiences hosted by Ribeye’s expert butchers. These evenings bring you closer to the craft of great steak with premium cuts, hands-on knowledge, and the stories that make every bite unforgettable.

After selling out every one of our fall dates (including added second nights), we’re expecting another full season. This elevated winter menu showcases the very best of beef, from regional Canadian favourites to decadent Wagyu, designed to guide you through flavour, technique, and the artistry of butchery.

Our tasting menu features:

Starter

Classic Beef Tartare to begin the evening.

Second Course

A curated Ribeye flight featuring Dry Aged, Wet Aged, and Grass-Finished AAA Alberta cuts, exploring the nuances created by different feeding programs and aging processes.

Third Course

A trio of our Butcher's Choice Cuts. Flat Iron, Hanger, and Skirt steaks with rich scalloped potatoes.

Fourth Course

Premium Wagyu Ribeye and Strip steaks paired with a medley of sautéed mushrooms.

Final Bite

A decadent Beef Tallow Chocolate Torte.
