The Experience
Our Steak Flight Night menu showcases the very best of beef — from Canadian AAA favourites to rich Wagyu selections — designed to guide you through flavour, texture, and the artistry of butchery.
Starter
Classic Beef Tartare to begin the evening.
Second Course
A curated Ribeye flight featuring Dry Aged, Wet Aged, and Grass-Finished AAA Alberta cuts, highlighting how aging and feeding programs influence flavour and texture.
Third Course
A trio of Butcher’s Choice Cuts — Flat Iron, Hanger, and Skirt Steak — served with rich scalloped potatoes.
Fourth Course
Premium Wagyu Ribeye and Striploin, paired with sautéed mushrooms.
Final Bite
A decadent Beef Tallow Chocolate Torte.
